On the course main page, click 'Settings' from the administration bar.

Click 'Course format' to open an additional menu.

Select the file icon.

Click 'Choose file'.

Fill in additional fields and click 'Upload this file'.

At the bottom of the settings page, click 'Save and display'.

Confirm to see if the course banner has been updated.
