Click a date and time to create an event.

Select the settings you wish to use. You can decline invites to events automatically, or not at all. And you can include a message if you wish.

Users writing you an email, will see that you are out of office. This is distinct form a Vacation Responder which simply replies to the user via email.

Creating an Out of Office in Google Calendar will block out part of your Calendar so that you cannot be booked for meetings, or depending on your settings, can auto reply to invites that you are out of the office. Additionally, users writing you an email will see that you are currently out of office, which is different from a Vacation Responder.
